Mum’s Weetabix Breakfast Loaf

- 3 Weetabix biscuits
- 1 cup (250 mL) brown sugar
- 3/4 cup (175 mL) mixed dried fruit
- 1 cup (250 mL) milk
- 7 oz. (200 g) self-raising flour
- 1 egg
- Pinch salt
- Soak Weetabix, brown sugar and fruit in the half pint of milk in a bowl and leave overnight.
- The next day, beat in self-raising flour, 1 egg and a pinch of salt.
- Place in a 2 lb lined loaf tin.
- Bake for 1 1/2 hours at 330ºF (165ºC).
